Learn how to prepare and cook a range of feathered game as well as venison and rabbit on Peter Harrison’s game cookery course.
Peter will teach you all the preparation and kitchen skills you need to get the most out of wild meat. We have designed the course to take full advantage of in season, locally sourced game. You will learn how to skin, joint, pluck and draw a variety of game birds and rabbit, before using the meat in our school kitchen to create a range of tasty dishes.
The course will run from 10.00am until 3.000pm on January 15th 2017 and includes practical and demonstration cookery sessions, lunch and refreshments. All the ingredients, equipment and the recipes for the day will be provided.

The Food Hub is home to a state of the art cookery school, butchery with a smokehouse and curing facilities and a commercial catering kitchen. Set up with the aim to create a real ‘foodie’ hub in Mid-Suffolk, it supports the local food and farming industries and ingredients, and produce used in the courses are sourced as locally and as seasonally as possible.
