Peter is an accomplished chef who has over 25 years of experience. He has worked with the likes of Alistair Little, The Leaping Hare in Suffolk and ran his own restaurant for five years. Peter’s inspiration comes from the countryside around him and his ethos of using seasonal, local ingredients makes him a perfect fit for Food Hub tutor.’
Course Details…
Learn how to prepare and cook a range of feathered game as well as venison and rabbit on our game cookery course. I will teach you all the preparation and kitchen skills you need to get the most out of wild meat. We have designed the course to take full advantage of in season, locally sourced game. You will learn how to skin, joint, pluck and draw a variety of game birds and rabbit, before using the meat in our school kitchen to create a range of tasty dishes.
Local venison will be provided by James Allen of Discover Venison. Discover Venison provides top quality venison that is harvested from the local wild population.
The course at takes place at Kenton Hall Estate Food Hub on 31 January 2016, 10am–3pm.
It includes practical and demonstration cookery sessions, lunch and refreshments. All the ingredients, equipment and the recipes for the day will also be provided.
